Ingredients

Servings:4

  • 1 cup dry quinoa, rinsed (makes about 3 cups cooked)
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • ⅓ cup crumbled feta
  • ¼ cup chopped parsley
  • 3 Tbsp extra-virgin olive oil
  • 3 Tbsp lemon juice
  • ¼ tsp salt

Instructions

  1. Cook the quinoa in 2 cups water: bring to a boil, cover and simmer 15 minutes. Fluff and spread out to cool.
  2. Whisk the olive oil, lemon juice and salt in a large bowl.
  3. Add the cooled quinoa, chickpeas, cucumber, tomatoes, olives and parsley and toss.
  4. Top with the feta and serve, or chill until ready to eat.

Tips

  • Leave out the feta to make it vegan.
  • Rinsing canned chickpeas lowers their sodium.

Storage

Keeps 4 days in the fridge, making it a good meal-prep lunch.
