Ingredients

Servings:2

  • ¼ cup chia seeds
  • 1 cup unsweetened almond milk
  • 1 tsp maple syrup
  • ½ tsp vanilla extract
  • 1 cup fresh strawberries and blueberries

Instructions

  1. Whisk the chia seeds, almond milk, maple syrup and vanilla in a bowl.
  2. Rest for 5 minutes, then whisk again to break up any clumps.
  3. Cover and refrigerate for at least 4 hours, until thick and spoonable.
  4. Divide between two glasses and top with the berries.

Tips

  • For a smoother texture, blend the pudding after it sets.
  • Unsweetened soy milk adds more protein than almond milk.
