Kefir, which typically contains a broader mix of bacteria and yeasts than yogurt, has been studied for lactose digestion in people with lactose intolerance, with several small trials suggesting improved tolerance.

Kimchi and Sauerkraut

Fermented vegetables are rich in lactic acid bacteria, fiber, and plant polyphenols. Studies from South Korea have examined kimchi in relation to metabolic markers, including cholesterol and blood pressure, generally reporting favorable but modest effects. Sauerkraut has been analyzed for its content of beneficial Lactobacillus species, though sodium content is often high, which is a consideration for people managing blood pressure.

Kombucha

Tempeh, produced by fermenting whole soybeans, is often used as a plant-based protein source and delivers fiber alongside microbial metabolites.

Beyond Digestion: Immune, Metabolic, and Mood Signals

The gut microbiome interacts with the immune system, the endocrine system, and even the brain through what researchers call the gut-brain axis. Reviews published by the National Institutes of Health note that microbial byproducts such as short-chain fatty acids may influence immune signaling, glucose regulation, and neurotransmitter production. Trials linking fermented foods directly to mood outcomes are still small and mixed, but interest in the field is expanding as more randomized studies are published.

Observational research has also linked higher fermented-food intake with lower markers of chronic inflammation and, in some cohorts, reduced risk of certain cardiovascular events. Who Should Be Cautious

Most healthy adults tolerate fermented foods well, but a few groups warrant extra care.
